Joseph Baum, legendary restaurateur, became a restaurant consultant in 1970 after a long and distinguished career with Restaurant Associates, where he rose to become president. His first consulting project was with the Port Authority of New York and New Jersey. His charge was to plan all the public restaurants for the new World Trade Center in Lower Manhattan.
Amongst plans for The Big Kitchen, Market Bar and Dining Rooms, Observation Deck Restaurant, and Sky Lobby restaurants was a two acre restaurant complex on the 106th and 107th floors of the North Tower, named Windows on the World. Planning started in earnest in 1971 with Michael Whiteman and Dennis Sweeney, as well as many other consultants, designers, and architects.
